Krista’s Easy Refried Beans Recipe
After trying many different kinds of Refried Beans recipes, this one that I have perfected is my favourite. So easy, and so good! Pinto beans are a great source of iron, and a yummy way to add more protein to your diet without eating (more) meat.
Ingredients: 1 Can Pinto Beans with liquid (Black Beans or even Kidney Beans work too)
¼ Onion, diced (More or less to taste) ¼ Teaspoon Garlic Powder or One Garlic Clove smashed 2 Tablespoons Olive Oil/Cooking Oil
Pinch Salt Pinch Pepper 1 Teaspoon Cumin Powder (More or less to taste)
½ teaspoon Cayenne Pepper
Directions:
Heat oil in a large pan. Add diced onions and cook until slightly transparent. Add fresh garlic and cook a minute more, or, throw in garlic powder and cook for a minute more, making sure to stir so nothing burns.
Add can of beans, with liquid, to the pan. Cook for 10 minutes. After 5 minutes, Add salt, pepper, and cumin and cayenne. Add more or less of any of the seasonings according to your tastes.
With a potato masher, or good ole’ fork, mash up the beans really well. Some people like to keep some whole beans, but I like to smush them up, so the liquid gets cozy with the beans, and it gets a nice creamy texture.
Cook for about 5 more minutes, stirring frequently to prevent burning.
Voila! Serve in a burrito, or with rice. Place leftovers in the fridge.
